yay for earth challenge iii

Welcome to the Yay for Earth Challenge in its third iteration. The challenge is a 5 day dinner meal plan put together by myself and Stevie VanHorn. Here you will find the shopping list and links to all of the recipes for this challenge. Our goal with this is to make sustainable and healthy cooking fun and approachable! Buy bulk and low waste where you can.

MONDAY 1/14:  caesar salad with parm 

TUESDAY 1/15:  walnut bolognese

WEDNESDAY 1/16:  quinoa, kale, roasted cauliflower bowl

THURSDAY 1/17:  winter minestrone with parsley pesto

FRIDAY 1/18:  roasted broccoli pasta
